Sprouted Overnight Oats with Pumpkin Seeds, Chia Seed Protein, Mandarin Slices, Goji Berries, and Coconut Yogurt

This delightful and nutritious overnight oats recipe offers a wholesome and refreshing way to begin your day. With the unique addition of sprouted oats, and a topping of pumpkin seeds, chia seed protein, mandarin slices, goji berries, and creamy coconut yogurt, you'll experience a burst of flavors and textures.

 

Ingredients:

 
1 cup sprouted rolled oats
2 tablespoons chia seed protein powder
1 1/2 cups unsweetened almond milk (or your preferred milk)
1/4 cup pumpkin seeds
1/4 cup goji berries
2 mandarins, peeled and segmented
1/2 cup coconut yogurt
1-2 tablespoons honey or maple syrup (optional, for added sweetness)
1 teaspoon vanilla extract
A pinch of salt
Fresh mint leaves (optional, for garnish)

Instructions:

 
Prepare the Overnight Oats:
In a mixing bowl, combine the sprouted rolled oats, chia seed protein powder, almond milk, vanilla extract, and a pinch of salt. If you prefer a sweeter taste, you can add honey or maple syrup at this stage. Stir the ingredients thoroughly to ensure that the protein powder is fully incorporated.
 
Refrigerate Overnight:
Cover the bowl with plastic wrap or a lid and place it in the refrigerator. Allow it to sit overnight or for at least 4 hours, allowing the oats to absorb the liquid and the chia protein to thicken the mixture. This will result in a creamy and nutrient-rich oat base.
 
Assemble the Toppings:
To begin, sprinkle the pumpkin seeds over the oats. These seeds provide a delightful crunch and a nutty flavor.
