Cashew Butter, Sprouted Oats, Apricot Energy Balls

  • 1 cup sprouted oats
  • 1/2 cup cashew butter
  • 1/4 cup honey or date syrup
  • 1/4 cup chopped dried apricots
  • 1/4 cup mini chocolate chips (optional)
  • 1/2 teaspoon vanilla extract

Combine all the ingredients in a bowl. Roll the mixture into small balls, and refrigerate for at least 30 minutes. These energy balls make for a perfect on-the-go snack.
